Instructions
1. Brown the Beef
In a large skillet over medium-high heat, cook the ground beef and ground chuck until fully browned (about 5–7 minutes). Drain any excess fat and set aside.
2. Sauté Onions and Jalapeño
In a large stockpot, heat olive oil. Add the yellow onion, white onion, and diced jalapeño. Cook for 3–5 minutes until softened.
3. Add Remaining Ingredients
Return the beef to the pot. Add diced tomatoes, tomatoes with green chiles, hot sauce, chili powder, cumin, garlic powder, salt, and pepper. Stir well.
4. Simmer
Bring the chili to a boil, then reduce heat to low. Cover and simmer for 3 hours, stirring occasionally.
5. Add Pinto Beans (Optional)
If using, stir in the undrained can of pinto beans. Simmer uncovered for an additional hour.
